Promoting the fruits of our cities , our streets, shared gardens, private gardens, that is the founding idea of Fruit Mosaics . By associating them with fruits, mostly from organic stores, I work to reveal and create simple, original, sometimes complex flavors, by highlighting or combining fruits, vegetables, aromatic plants and spices.
Lots of fruit, as little sugar as possible and that's it!
A 100% plant-based product, without compromise, in which no gelling agent, artificial flavoring, or coloring is added.
My bias is to preserve as much as possible the pulp, fibers, and sometimes the seeds. Thus, we sometimes recognize the presence of ginger by the emergence of fibers, we distinguish figs, raspberries, strawberries, or passion fruit by their seeds. All these elements contribute to the originality of each tasting, and perhaps also have an impact on the way sugar is absorbed.
To give them a unique aromatic profile, the production of Fruit Mosaics ends with a final drying stage in a vaulted cellar located in the center of Paris. This is where the magic happens and the character of each flavor is fully expressed!
